油爆双脆
制作过程
所謂「雙脆」,是雞胗和羊肚,兩樣東西旺火爆炒,炒出來紅白相間,樣子漂亮。口感韌中帶脆,咀嚼可聽見喀支作響的聲音。雞胗和羊肚皆需用刀劃橫豎痕,越細越好,使熱油容易迅速滲透;雞胗肉質厚需先下鍋,再行將羊肚放入,下鍋爆炒勾汁,廚師須靠手勁將上述兩種材料從鍋中拋起數次,不用鍋鏟翻炒,是一道完全依靠火侯與手藝烹調的佳餚。
