油渣

猪油渣是全世界范围内流行的美食,在欧亚大陆以及美洲大陆受到广泛欢迎。[3]
在香港和中國大陸,油渣一般是用肥豬肉或猪板油以低溫油油炸或低温干烧(有的还会加入少量水),逼出豬油後剩餘的肉塊。[4][5]所以又稱豬油渣。是平民麵食油渣麵不可缺少的材料[6]。
在日本,油渣()可用各種肉類做成,包括牛肉、馬肉、豬肉、雞肉、甚至鯨魚肉。
