耶氏酵母屬
耶氏酵母屬(學名:Yarrowia)是子囊菌門酵母菌目雙足囊菌科的一個屬。過去本屬為單型屬,僅包含解脂耶氏酵母(Yarrowia lipolytica,又稱解脂亞羅酵母)一種,為可使用許多烴類為碳源的酵母菌(雙態性真菌)[2],並可合成一些特殊油脂,其細胞中油脂含量超過20%[3],因此是工業微生物學上的重要物種[4]。2019年,歐洲食品安全局核准解脂耶氏酵母為一種安全的新興食物[5]。
